Apple and almond cake

 

225g soft margarine
3 large eggs
340g castor sugar
1.5 tspn almond essence
340g SR flour
2 level tspns baking powder
Approx 2 medium cooking apples
20g ish of ground almonds
Couple of pinches of flaked almond

 
Oven pre-heated to 325F, 160C, Gas 3.
Grease an 8"/20cm loose-bottomed cake tin
Place all ingredients except almonds in a bowl or electric mixer, and
beat well.
Spread half in the bottom of the cake tin, cover with the sliced
apples, and put rest of mixture on top.
Sprinkle the ground almonds on top and then sprinkle over the flaked almonds

Bake 1.5 hours until lightly browned and shrinking from sides of tin.
